
One of my go-to low carb / keto desserts is an easy sugar-free cheesecake! I usually make it without a crust, unless I happen to have pecans.

- 2 8-oz blocks cream cheese (softened)
- 2 eggs
- 1 teaspoon vanilla
- 1/3 c whipping cream
Mix cream cheese till fluffy, then add remaining ingredients. Pour into buttered (or sprayed) pan . Bake at 350 degrees for about 30 minutes. The middle should still be a little jiggly- it will harden a bit as it cools.
You can top it with sugar free caramel syrup, unsweetened fruit, etc!
If I have pecans, I use my food chopper and chop about 1 1/2 cups pecans and mix it with a couple of Tablespoons of Swerve brown sugar and a couple of tablespoons of melted butter.
