Southern Squash Casserole

Squash Casserole

3 lbs yellow squash (sliced)

5 tablespoons butter, divided

1 onion (chopped)

1 c cheddar cheese

2 eggs (lightly beaten)

1/4 c mayonnaise

2 tsp sugar

1 tsp each salt & pepper

1 sleeve of crackers (Ritz or saltine)

In a small pot, cover squash with water and boil 8-10 minutes (till just tender). Drain in colander. Use the same pot and melt 4 tablespoons butter, add onion and sauté 5 minutes. Remove from heat and stir in cheese, eggs, Mayo, sugar, salt, and pepper. Spoon into lightly greased 9×13 pan. Melt remaining butter and pour over crushed crackers in a small bowl. Stir well and spread evenly over squash. Bake at 350 degrees for 30-35 minutes.
