
Grits aren’t just for breakfast.
These grits are the perfect side dish! They can be used as a substitute to potatoes, or besides to them.
They also reheat well.

Rotel Grits
1 ¼ c milk
1 tsp salt
1 c grits
1 stick butter
¼ c chopped green onions
¼ tsp garlic powder
2 ½ c sharp cheddar cheese
10 oz can Rotel
Preheat oven to 350°.
Boil the milk with 2 cups water, then add the grits (stirring constantly while adding). Cook on low till they are done, then add the butter. Cook on low, while sauteing the green onions. Add the green onions, garlic powder, rotel, and 2 c cheese to the grits. Pour into pan, put remaining ½ c cheese on top. Bake 30 minutes.
