
My Mama HATES cooking, and she doesn’t do a whole lot of it…BUT there are a handful (if you were missing 2 fingers) of things she cooks very well. Her cream cheese pound cake is one of those things When we were young (just heard Adele sing this line in my head) we loved to see that cake sitting on the counter. Feeling nostalgic this week and had to make one for myself.

Cream Cheese Poundcake
6 lg eggs
3 cups sugar
3 sticks butter (softened)
8 oz cream cheese (softened)
2 t vanilla
3 cups sifted all-purpose flour
Pinch of salt
Preheat oven to 325 degrees. Mix butter and cream cheese till well blended. Add sugar, salt, and vanilla – mix well. Add eggs one at a time beating well after each one. Add flour and mix well. Bake for 1 1/2 hours. Check it after an 1 hour and 15 minutes – it may be done.

Great with coffee, strawberries, ice cream, or anything else!
