Delicious Spinach Quiche with Pie Crust Recipe

I forget how delicious quiche is with the crust.

I usually make it without the crust (and in muffin tins) for easy low carb breakfasts…but I had an extra pie shell today….SO good!

Spinach Quiche

1 stick butter
1 onion (chopped)
Bag of fresh spinach (chopped)
1 1/2-2 c shredded cheese
5 eggs
1 c milk

Preheat oven to 375°.

Sauté onion in butter for about 5 minutes. Add spinach to taste (I used about 3 big handfuls) and cook till wilted. Mix in 1/2 of cheese. Remove from heat.

Whisk eggs in a bowl. Mix with spinach mixture. Pour into pie shell. Bake for 15 minutes & add remaining cheese to the top. Bake an additional 35 minutes (till set). Let cool about 10 minutes before slicing.
