
When we first moved to Alabama about 12 years ago, we sat behind Mrs. Pat in church. My husband informed me that she was his high school English teacher. He said she didn’t like him very much then.
He was actually voted as the quietest boy in his grade, so it wasn’t because he was talkative. (She said she doesn’t remember not liking him).
I liked Mrs. Pat from the start, because she wasn’t a fake “bless your heart” kinda gal. She said what she meant, and she reminded me of home because of it (Louisiana).
She used to make this skillet pound cake for our church fellowships, and I got the recipe from her. It has only 4 ingredients and whips up quick and easy. Plus, I love any dessert made in a skillet!

Mrs. Pat’s Skillet Poundcake
2 sticks of butter (melted)
1 1/2 cups sugar
3 eggs
1 1/4 c all-purpose flour
Grease an 11 or 12 inch skillet. Mix the sugar and melted butter. Add in eggs and mix well. Add in flour and mix about 3 minutes. Pour in skillet and bake at 300° for 1 hour.
It is so good!
