
Strawberry fig jam is probably my husbands favorite homemade jam. It calls for figs, strawberry jello, sugar, and lemon juice!
It would also be a good recipe for beginners.
Did you know that figs are mentioned in the Bible several times? The first time being in Genesis! Remember Adam and Eve sewing coverings for themselves out of fig leaves after they sinned?

After you get your figs, it’s a good idea to rinse them. I usually run a sink full of water and put them in there and stir them around a bit.

Strawberry Fig Jam
3 cups mashed figs
1 big box strawberry jello
2 1/2 cups sugar
1. First prepare jars. I put mine on a cookie sheet in the oven on 275° while I made the jam.
2. Chop the stem and bottom off the figs. I roughly peel the ones with tougher skins. Chop/Mash/Blend them to your desired size. I blended these, but sometimes make it chunkier.
3. Put all of the ingredients in a big pot and cook till thickened (about 20-25 min). When you pick the spoon up, the mixture will coat the spoon.
4. Pour into prepared jars and seal immediately. You should hear the lids popping soon afterwards, letting you know they are sealed!
I doubled the recipe and got about 4 1/2 pints. (One of the pint jars pictured is only 1/2 full).
