
This is a perfect school week recipe! It’s 5 minutes at the beginning of the day and the end result gives you several dinner options.!
You just throw it all in the crockpot and shred it easily with forks at the end of the day.
You can use it for tacos…

Or salad…

Or chimichangas …

It’s also great for southwest soup!

Crockpot Shredded Chicken
3 lbs boneless chicken breast (frozen is fine!)
1 cup salsa or picante
1 pk taco seasoning mix
Put all ingredients in the crockpot and cook for 6-8 hrs. Shred using 2 forks (or a Kitchenaid mixer).
(I used a little more than a cup of picante)

P.S. you can also replace the salsa & taco seasoning with chicken broth & other seasonings…if you don’t want it Mexican.
